1 lb hamburger meat – browned with salt, pepper, and onion flakes; drained

2 diced red potatoes

1 can Mexican Rotel

El Paso Taco Seasoning to taste (liberally sprinkled)

Combine all in a skillet – cover and simmer for 45 minutes.  If you want to speed up – place potatoes in a dish with taco seasoning and a little water and cook until almost done, drain, and throw in with rest of mixture to simmer.  I do about 20 minutes total – and just cook the potatoes during the first few minutes of that.  I don’t usually need any more liquid than that that is in the Rotel, but keep an eye on it to make sure all the liquid doesn’t cook out.
